Its reference to low temperature cooking reminded me of Viljalmur Stefansson’s observation of the low temperature cooking methods he observed while living with the Inuit during Arctic explorations in the early 1900s. Stefansson’s book from 1960, “The Fat of the Land,” is available online in pdf format.
Another health topic for your consideration as a newspaper article is the effects of a protein variant in cow’s milk called beta-casien type A1. Type A2 is the original protein and most cow’s milk available now contain both A1 and A2. The type of protein produced can be selected in the breeding program.
The topic surfaced in New Zealand where a book was published in 2007 titled “Devil in the Milk” by Keith Woodford. A statewide grocery chain reportedly sold A2 milk for a while, but none seems to be available now.
More information on the health effects of the opioid, BCM-7, released during the digestion of the A1 beta-casien variant would be appreciated, along with information on any A2 milk dairies planned or in current operation.
