FAIRFIELD — The U.S. Cider Association has recognized a Fairfield business for its work in the industry.
Jefferson County Ciderworks’ Tap Room is CIderCon’s 2018 Cider Establishment of the Year. The honor covers the Midwest region. The conference is the largest cider gathering in the world.
The company began five years ago, turning what was a hobby into a full-blown business. In 2018 it purchased a 12,000 square foot production facility and launched canned ciders as a way to move into retail sales.
Cider has a long history in the United States. At one time it stood alongside beer in the country’s taverns and bars. But it fell out of favor in the 20th century and was overshadowed beer and other drinks until relatively recently.
The Tap Room serves as a test kitchen for the ciderworks, including development of new products like barrel-aged ciders.
